University of San Jose – Recoletos (USJ-R) was the only school invited to demonstrate at the food and travel festival organized by the Department of Tourism (DOT).
Kaon Na! (Let’s Eat!) is a festival which gathered selected chefs from prominent restaurants and hotels in Cebu. USJ-R was chosen to represent the Cebu schools which offer hotel management programs.
Participating in the presentations were chefs June Fernandez of Cebu Parklane International Hotel; Marlou Almasco of Golden Prince Hotel; Richard Hao of University of San Jose-Recoletos; Deofrey Vistal of Radisson Blue Cebu; Vincent Caracut of Marco Polo Plaza Cebu; and Anthony Choa of Rafle Gourmet.
The chefs served their best recipes using local farm products. Prior to that, they showed how to make their chosen dishes.
Josenian faculty member and chef, Richard Hao, participated in the food presentation together with his student sous-chefs. They cooked Beef Humba with Chocolate Sikwati Sauce.
Bogo City Tourism Officer Jocelyn Tan praised the dish. She remarked that Hao and his sous-chefs gave a ‘savory twist’ to the traditional humba. She said it is not usual for a beef to be used in a Humba Recipe.
Kaon Na! was designed to create awareness and interest on local cuisines and tourism destinations. It was held on October 12 and 13 at the Ayala Terraces.
Aside from preparing the food during the tasting and demonstration, the USJ-R Hospitality Management students also helped in serving the food to the invited guests and tourism officers. Joining the activity is one of the ways of the university to expose hospitality management students in the industry where they aim to work.
